ASSESSING SHARED KITCHEN MODELS IN MINNESOTA

In partnership with CLUTCH, Food Works Group investigated the range of shared kitchen models implemented across Minnesota. We took a regional approach, with special attention paid to the often less-studied areas outside of the Twin Cities metro area. Our research focused on the factors impacting the financial and operational viability of these operations. Using our national network and experience as kitchen operators, we benchmarked Minnesota against nationwide trends and best practices. Finally, we engaged with industry stakeholders to bring our findings to life through a road map for future work to enhance the local landscape for shared kitchen operators and food businesses alike.
