CO-PACKING FACILITY FEASIBILITY STUDY, BUSINESS PLAN, AND KITCHEN DESIGN

FEASIBILITY AND VIABILITY, INFRASTRUCTURE PLANNING | 2021 - 2022

In partnership with Industrial Council of Northwest Chicago, Allies for Community Business, and IFF Community Development Financial Institution (CDFI), Food Works Group (FWG) conducted a feasibility study and crafted a business plan to support the buildout of a food-grade facility that will house mid-scale co-packing operations to support Hatchery graduates and other entrepreneurs. FWG interviewed entrepreneurs, potential partners, and other key food system stakeholders to determine needs, challenges, business models, and opportunities. Additionally, FWG investigated best practices of comparable models around the country and created an evaluation framework to assess the viability of such a facility.
