SHARED USE KITCHEN FACILITY DESIGN, OPERATIONS PLANNING, AND FINANCIAL MODELING

FEASIBILITY AND VIABILITY, FINANCIAL MODELING | 2022

Food Works Group (FWG) was commissioned by Value Chain Cluster Initiative (VC2) to support Sydney West’s efforts to redevelop the downtown district of Elkins, West Virginia, to include a shared-use commercial kitchen for emerging food business users in the surrounding area. In pursuit of project viability and financial sustainability, FWG drew upon its seasoned work in this sector developing different types of shared-use kitchens in communities across the country. FWG also engaged with Elkins and Randolph County stakeholders through one-on-one interviews and follow-up engagement. This work culminated in a shared commercial kitchen facility design, an operations roadmap, and a financial modeling tool.
